Chipotle
Chipotle is pretty much the only ‘fast food’ option for me, so I am def a regular patron. I found a couple recipes to replicate their rice & salsa; I’d like to try subbing the white rice for brown rice or another grain to make it a little healthier. Cilantro Lime Rice I Cilantro Lime Rice II Medium Green Salsa Recipe 4 medium-sized fresh ripe tomatoes 1 small bunch of...

Herbed Tofu Cakes
This is a recipe my sis tore out of a magazine (maybe Better Homes & Gardens, of all places…?) for me a while ago. I’ve been meaning to try it, looks pretty simple. Herbed Tofu Cakes: 16 oz firm tofu (drained/pressed) 1 large carrot, finely shredded (about 2/3 cup) 2 green onions chopped 1/4 cup fresh cilantro 2 Tbsp fresh mint (will probs skip this, HATE mint in my food.) ...

Barbecue-Style Portobellos
Mmmm. I <3 mushrooms! Found via healthy.happy.life recipe from pcrm.orgs 21-day vegan kickstart. Need to make this before summer ends. Check’n out more of the recipes at pcrm’s vegan kickstart; they seem really simple and wholesome which is what I am in dire need of. Between work and school I don’t make time to cook or eat enough and when I do eat its not the best options....

vegan breakfast sammie →
THIS is what inspired my return to tumblr: nom nom nom. It’s 11:30pm but I want this in my belly NOW. I’m a habitual breakfast-neglector. If anything, I just grab some fresh fruit, which I do think is the healthiest breakfast option, but sometimes something hot and chewy and savory for breakfast really would hit the spot… This is also sounds insanely quick and easy to put...

Gardein Crispy Tenders
Holy shitballs. These are so completely, exactly like chicken I actually find it disturbing. Like, I refuse to believe this is NOT chicken, it boggles the mind. I think the makers of Gardein are pulling a fast one on us all. And as if that wasn’t good enough: There seriously is no reason to eat real chicken with options like this out there.

More vegan food porn
Cause, although I have been cooking, it’s been the usual suspects: cheesy beef penne, oreo brownies, cheesy guac dip, etc. I’ve been spreading the vegan love to my non-veg friends and these are the faves. So, anyways, here’s more eye candy found via my fave tastspotting/vegan New Age Vegan Pasta Carbonara Vegan Sloppy Joes Raw Sushi with Daikon Rice Chocolate Hazelnut...

in the interest of full disclosure..
This weekend was probably my biggest fail since I started this whole vegan deal… I was at a party, a party at which I went out of my way to prepare delicious vegan treats for. So there I was, having a blasty-blast and knocking back a few shots and then I realized, “OH FUCK! THERE’S GELATAIN IN THESE!” Yeah, that’s right, I had consumed approximately 4 or...

Awesome Vegan Comfort Food
Cheesy “Beef” Penne This is another yummy recipe found via 365daysofvegan(girls got good taste!) This turned out surprisingly good. I was apprehensive because I’ve heard so many negative things about nutritional yeast. But even my non-vegan roomie gave it two thumbs up. I added mushrooms, because mushrooms make everything better (see also: garlic.) Really you could add...

P.S. Jamie Oliver’s Food Revolution? LOVE IT! Can we please agree, as a nation, that french fries do not constitute a vegetable serving and have no place in a school cafeteria? Please? Might I add that the idea that kids should be presented with a choice of what they are going to eat is ridiculous. Of course they are going to want french fries, pizza, and soda if that’s an option....

Vegan Brownies!
So this week I made two batches of OREO BROWNIES, from a recipe I bookmarked from miss 365daysofvegan months ago. I left one batch with my parents while I was visiting my hometown and then made a double batch later in the week for a work pot luck. Both were very well received, but I would not recommend doubling the recipe. They didn’t come out quite as moist, and got too crisp around the...

This sounds delish!
I was flipping channels late tonight and I peeped this cooking show on PBS called “Tommy Tang’s Easy Thai” He cooks with meat but it’s still seems like a pretty veg-friendly show; no eggs or dairy, just switch out the meat for some tofu or other protein. There was this one all-veg dish I want to try asap! (Not the most well-written recipe, I jotted it down real fast while I...

Cheesy, Oozy Guacamole Bean Dip: Revisited
My Roomie asked me to make Cheesy, Oozy Guacamole Bean Dip again for a baby shower she’s throwing Saturday! Even though it is not my recipe, I am really flattered that I would be asked to make a vegan dish for a completely non-veg crowd. I hope everyone likes it! A few alterations I made this time: I bought pre-made guac, which cost a fortune so in hindsight I should have made my own, I was...

it's been a long time...
I have some explaining to do… But first, here is my new favorite lunch: I recently discovered a kind of ‘hole in the wall’ Japanese place on one of my lunch-time walks. They have veggie sushi rolls and chilled edamame (never had it chilled before and OMG love it!) for under 5 bucks! Delish. And it’s the only place around work I can rely on for a decent vegan lunch! Ok,...

My absence
is not because I haven’t been adhering to my dietary standards. I’ve just been so overwhelmed by…life lately that eating is not exactly a common occurrence nor anything I have the motivation to record. That is bad of me, but I’m just stressed.

I finally got me some fresh fruit this morning! A kiwi and an apple (organic, I’ve decided to only buy organic apples from now on, for starters.) For lunch I had an Amy’s vegan enchilada dinner that was blaaah, totally flavorless (maybe because it was low in sodium?) I only had few bites. I didn’t make the Alicia recipe I mentioned yesterday. Instead me and my roomies finished...

These are going to be awesome once I tweak the recipe a little bit. First of all, not a fan of the carob chip. It just didn’t taste like chocolate, but perhaps that’s because the vanilla soymilk I used overwhelmed it? In any case, it just wasn’t chocolate-y enough. I would also cut back on the amount of milk the recipe calls for by a tablespoon or so. The chocolate never really...

So, this morning a woke up and thought “either I can stay in bed all day feeling sorry for myself again, or I can get up and do something productive.” I chose the latter. I picked 2 recipes to try out of Alicia Silverstone’s book The Kind Diet: Cheesy, Oozy Guacamole Bean Dip and Chocolate Peanut Butter Cups, both seemed like excellent Superbowl Sunday snacks. First off, the...

I have been sick, both the normal “drowsy, stuffy nose” kind and the love “ouch, my broken heart” kind… so no posts from me the last few days. I maintained my vegan diet tho, but not a healthy one. I haven’t eaten any fresh fruit, not nearly enough veggies, and my eating is totally erratic. One day I eat nothing but a few dried plums, the other an entire...

how I faired today...
Do bagels have eggs in them? I hope not :( This seemed like my best option from the convenience store. I resisted butter and cream cheese in favor of jelly (which tasted about as much like “strawberries” as bonnie bell chapstick. Ugh! Just let fruit be fruit, people!) I also commited one grave sin, but it was out of complete necessity… I drank (less than half) an energy...

vegan chicken-less fajitas
The recipe for fajitas pretty much explains itself… sauteed onions and peppers, gardien chick’n and seasonings. I like to fry my shells and top it off with whatever greens I have on hand, salsa and tofutti sour cream. I also picked up some Follow Your Heart Vegan Cedar to try out. These would have been awesome if not for my unfortunate choice for a seasoning packet :( It stuck to...

February Pledge: Diversity
I am aware of the fact that I basically only eat variations of the same 5 or so foods. You’d think that I’d get bored, but I honestly don’t. I can happily eat the same meal for days on end before it occurs to me to switch it up. However, for a truly healthy, well-balanced diet I know that I need some nutritional diversity. So that’s my goal for February, diversity! I am...

so far this weekend
Yesterday I had, like, a million soy ice cream bars, a pb sammi and chipotle veg burro (sans cheese and sour cream.) So far today I have had a veggie burger and an orange soda. I am now contemplating between A) “chicken-less” fajitas with my gardien chick’n or B) a tofu noodle+spinach pesto+mushroom pasta dish for dinner….hmmm.

I cheated last night, with sushi. It started out with the best intentions. I was was looking forward to a night out all week and stoked for some veggie sushi, only to find that every single thing on the menu had fish and/or cream cheese :( So, ever faithful, I ordered vegetable tempura, and it was a great disappointment (fried vegetables? How can you mess that up? but they did.) So I picked at...

PS I forgot to post what I ate yesterday. Fruit, per usual. Pesto veg salad. And for dinner…. I got Chipotle, but I didn’t break my dairy-free trend! For a while I kept passing on Chipotle b/c I didn’t want to ruin my good streak, and thinking ‘whats the point of getting a burro without cheese and sour cream.’ But I got one with just rice and vegetarian black beans...

All American Vegan Cheeseburger
Amy’s vegan bistro burger, topped with Tofutti American cheeze, sauteed onions, spinach and veganaise between Arnold’s Sandwich Thins. Next time I’ll nix the Tofutti cheeze, I gave it a few tries and the verdict is in - gross. Their sour cream is kinda funky too, I have to drown it in salsa to cover up the under-taste. I do like the Follow Your Heart of mozzarella I got (makes...

me on a soapbox...
not a place I usually feel comfortable, but I need a good rant after today… So last night we found a puppy wandering around our neighborhood. We knocked on some doors hoping to find her owners and ended up keeping her in the garage over night. I put up a poster on our neighborhood mailbox and I hope hope hope someone will claim her. I would keep her if I could. The heartbreaking thing was...

This is the first coke I’ve had in a few days, and it didn’t even taste that good to me! Lately when I’m craving soda I picture this nasty list of ingredients and it tends to dissuade me. Soda really is disgusting, flavored-fructose crap in a plastic bottle. I still cheat sometimes, but I’m drinking it less and less every week. (Lunch = pesto veggie pasta salad and a...

awesome pasta salad
This is what I made the basil pesto for, sooo yummy! I made a big ‘ole batch to eat on for the next few days. It was super easy to make, it’s just pasta + pesto + a bunch of veg. For the pesto: I don’t really measure anything when I cook (measurements are for baking, I say!) so I just threw the basil in a handful at a time and added the olive oil bit by bit until I got the...

delicious vegan pizzettes
These were the most delicious pizzas, and it almost went all wrong; the crust was burnt and I barely got them out before they were ruined all-together! I just cut off the crusts and they were saved.
